for the filling

  • 15 medjool dates, pitted
  • ½ cup number four activated honey pecan butter  or
  • 2–3 tbsp number four raw blossom honey


for the chocolate coating

  • 170g 70% dark chocolate, chopped
  • 1 tsp coconut oil (optional, for shine)
  • sprinkle flaky sea salt
  • crushed pistachios
  • toasted coconut
  • dried rose petals

method:


slice each medjool date lengthwise and remove the pit, keeping the date intact. fill each date with about ½ teaspoon of number four activated honey pecan butter. for a lighter version, drizzle with raw blossom honey instead. gently press closed and place in the freezer for 10–15 minutes to firm. melt the dark chocolate using a double boiler or in short intervals in the microwave, stirring until smooth and glossy. Stir in coconut oil if using. dip each date into the melted chocolate, tap off excess, and place onto parchment paper. finish with flaky sea salt, crushed pistachios, or a touch of toasted coconut before the chocolate sets. let rest at room temperature or chill until firm.


notes: the pecan butter version is richer and almost caramel-like. the raw honey version is lighter, softer, and more floral. freezing before dipping helps create a clean, even chocolate shell. use high-quality dark chocolate. it makes all the difference.
